Write user docs

Have added the bare minimum required to build docs to master (docs folder, mkdocs.yml and two markdown files) and have since been writing in this branch instead. At some point we merge? Not sure what best practice is. I guess if docs are in same repository as code, the idea is to keep in tight sync.
